Ingredients:

  • 1 & 1/4 cups overly ripe mashed banana
  • 2 tablespoons honey
  • 1 egg , lightly beaten
  • 1 teaspoon vanilla
  • 1 & 1/2 cups quick cooking oats
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup dark chocolate chips
  • Flaky sea salt

Instructions

Set the oven to 350°F. Using parchment paper, line two baking pans.
Make sure to thoroughly mash the bananas in a large mixing basin to achieve smoothness. Then add the quick-cooking oats, honey, egg, vanilla, cinnamon, and chocolate chips.
Form dough balls with a scoop that measure 1 1/2 tablespoons. They should be spaced 2 inches apart on the prepared baking sheets. Add some sea salt to the tops.

Bake for 12–15 minutes. The chocolate should still appear a little bit moist, feel soft in the middle, and have golden brown borders. As they cool, they will continue to solidify.
Allow to cool for five minutes on the baking sheet before transferring to a wire cooling rack to finish cooling.
