Banana oatmeal cookies are a delicious and relatively healthy treat that combines the flavors of ripe bananas and hearty oats. Here’s a simple recipe to make these cookies:

Banana Oatmeal Cookies

  • 1 & 1/4 cups overly ripe mashed banana
  • 2 tablespoons honey
  • 1 egg , lightly beaten
  • 1 teaspoon vanilla
  • 1 & 1/2 cups quick cooking oats
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup dark chocolate chips
  • Flaky sea salt

Set the oven to 350°F. Using parchment paper, line two baking pans.
Make sure to thoroughly mash the bananas in a large mixing basin to achieve smoothness. Then add the quick-cooking oats, honey, egg, vanilla, cinnamon, and chocolate chips.
Form dough balls with a scoop that measure 1 1/2 tablespoons. They should be spaced 2 inches apart on the prepared baking sheets. Add some sea salt to the tops.

Bake for 12–15 minutes. The chocolate should still appear a little bit moist, feel soft in the middle, and have golden brown borders. As they cool, they will continue to solidify.
Allow to cool for five minutes on the baking sheet before transferring to a wire cooling rack to finish cooling.

These banana oatmeal cookies are not only delicious but also customizable. You can add your favorite mix-ins like dried fruits, nuts, or chocolate chips to make them even more flavorful. Plus, they are a great way to use up ripe bananas and create a healthier treat compared to traditional cookies.
