These white truffles are a delicious and scrumptious treat that is low carb and keto friendly. In their preparation, they have coconut rum, butter, heavy cream, and sugar-free white chocolate. They are easy to make and perfect for a special occasion.

Ingredients White Truffles :
- Butter, 125 grams
- 250 g of either commercially available or home-made sugar-free white chocolate
- Sunflower lecithin, erythritol, vanilla extract, and cocoa butter.
- 1 tablespoon heavy cream
- 150 g of heavy cream
- 2 cl of coconut rum, produced with rum, coconut essence, and erythritol or purchased.
Instructions:
- In a double boiler, melt the sugar-free white chocolate in small chunks with one tablespoon of heavy cream. Stir occasionally until glossy and smooth.
- Once the pot is off the heat, add the butter and coconut rum. After adding everything, whisk thoroughly.
- Whip the remaining heavy cream until stiff peaks form. Gently fold it into the chocolate mixture to properly incorporate it.
- For at least two hours, or until it is stiff enough to form, the mixture should be cooled.
- Scoop out tiny balls of the mixture using a spoon or melon baller. Roll them between your palms to form smooth spheres, then place them on a baking sheet that has been lined with parchment paper.
- The truffles should spend an additional hour in the fridge.
